Microwave tip for today: Know your microwave. Before you do anything extensive, read the instruction as to what the wattage is, what weight it can handle on its turntable and understand that while you can do many things with your microwave, it is only meant to be used as the manufacturer suggests and not otherwise.
3 lb. corned beef (with seasoning packet)
Water (to cover)
1 large head cabbage, cut into 8 wedges or Brussels sprouts for something different.
Place corned beef in glass casserole or a microwave cooking container. Make certain all the juices in the bag are put into the container. Add water to bag to clean it out and empty into the container then add just enough water to cover. Cover with plastic wrap. Cook it on high microwave setting (9) for 2 hours or until cooked beef is tender. Add cabbage or Brussels sprouts. Cook on high (9) for 15 minutes. Sliced corned beef and serve with cabbage.
NOTE: Our total cooking time was approximately 1 hour and 15 minutes in our microwave. Your timing may vary depending upon the wattage and age of your microwave. Serves 4
Ingredients: All but beef used at the desired taste preferences of the cook. You should always take a recipe and make it yours.
2 1/2 to 3 lb corned beef brisket with seasonings
1 1/2 cups water: Remember just cover the meat and no more. If you have water left over don’t add it just to add it.
1 garlic clove or 1/4 teaspoon of chopped garlic to your taste
4 whole black peppercorns or slightly ground pepper to your taste
1 bay leaf if available
1/4 teaspoon mustard seed if available
2 medium onions quartered or chopped.
Carrots, sliced, amount depends upon cooks choice
3 medium red potatoes, quartered
1 cabbage, cut into 8 wedges or Brussels sprouts cooked whole
Brief refresher on instructions to try to make this as simple as possible:
Place brisket fat side up in casserole, add water. Sprinkle seasonings that came with the brisket over meat then add other spices to water covering the meat. Cover with plastic wrap. Microwave on high for 30 minutes then turn meat over. Replace the old plastic wrap with fresh wrap. Microwave on high for about 25 more minutes or until meat is tender. Your microwave will determine the correct cooking time in that not all microwaves on the market use the same wattage as we are working with. Turn meat over, add remaining ingredients, and recover. Microwave for 15 minutes or until vegetables are tender. Let it stand, covered, for 5 minutes. This Serves about 4.
