If you have a sweet tooth and a love for decadence you will love this recipe. If you’re counting calories, forget this.
The recommended cooking time in an oven for a cherry pie is 45 minutes or until golden brown. We cooked the cherry pie for 10 minutes in the microwave. The one we cooked it in is 1000 watts and is on its last legs. It was raining outside while we were cooking. Atmospheric conditions may have an influence on baking times; your time may be slightly more or less.
You’ll realize you can brown in a microwave. We added natural raw sugar to brown the top and add a bit of sweetness.
Mix in the bowl the package of crushed graham crackers, sweetened condensed milk, egg and sugar. Add the mixture to the bottom of a microwave 9″ square or round baking dish. Pour in dark cherry pie filling and spread over the bottom of the crushed graham cracker base. Pour 2 tablespoons of red wine over the filling.
Scrape the top of the Sprinkled Trader Vic’s Hot Buttered Rum Butter with enough to lightly cover the top of the pie so you can still see the pie filling itself underneath it. Completely cover the top of the pie filling until you could no longer see the pie filling and top it off with raw sugar to give it a browned effect when finished.
Put in the microwave for 5 minutes. Remove from microwave. Check with temperature to see if the pie filling is hot. Avoid touching the cherries, they will be hot regardless. Put in the microwave for another 5 minutes. Just before removing it from the microwave, we could see the pie filling was boiling. Remove the pie and check with a toothpick. We knew it was done when the toothpick came out dry and very hot.
What we really missed was having Vanilla Bean ice cream or whipped cream to put on top. The glass of milk did help. You know it’s especially good when you forget your manners and lick the plate.
