Is it your first Easter going gluten-free? Don’t worry. Since Easter meals often take the form of Easter brunch or lunch, it’s perfectly acceptable to serve breakfast foods mixed with extra side dishes. Here are several ideas to take your Easter brunch menu from the back burner to the dinner table.
Easter One-Dish Meals
When serving a group, one-dish meals such as casseroles and slow cooker creations are a time saver. Consider baking a crustless quiche or a an egg and potato frittata. These oven-based Easter brunch ideas can be loaded with fresh vegetables, cheese and unprocessed meats.
Or, warm up the slow cooker. A classic Sunday beef roast flanked with baby potatoes, carrots, celery and onion is delicious and gluten-free. If you like to use seasoning packets, read the ingredient labeling carefully. Wheat emulsifiers are often included. To avoid an allergic reaction, experiment with using fresh ground peppercorns, a sprig of dried rosemary or fresh chopped garlic to season the meal.
Wheat-Free Side Dishes
Add color to your Easter meal by serving colorful fruit salads and fresh vegetable trays. I always strive to represent a rainbow of colors for special meals. Since all fresh fruits and vegetables are naturally gluten-free, you’re only limited by your imagination. Just make sure to stay away from commercially prepared dressings and sauces that may contain wheat.
Try tossing fresh sliced strawberries and bananas with pineapple cubes and shredded coconut. Or, make miniature vegetable kabobs by threading green bell peppers, cherry tomatoes and yellow bell peppers on skewers. Serve the vegetables with a fresh bowl of hummus and your meal is naturally wheat-free.
Bread and Pastries Safe for Celiacs
You don’t have to give up bread, cookies, cake and other carbohydrates when avoiding gluten. Simply look for products made with flour that doesn’t contain the allergen. I love the rice flour-based Double Chocolate muffins made by Udi’s. Or, try making a flourless cookie using oatmeal and ground nuts.
If you’re craving cinnamon rolls or hot cross buns on Easter, use a wheat-free recipe that calls for rice flour, sorghum flour or tapioca flour. Eating gluten-free isn’t difficult, it just requires planning ahead and reading package labels carefully.
