Quick, Easy and Healthy Recipes

If you’ve been following Cheapeats for a while, you’ll remember the feature we did on Whole Foods Wellness Club. Ring a bell? Now that the warm weather is upon us and dare I say; “Bikini Season,” staying fit is priority #1. Eating right is truly the core of our success.

Many of us don’t know where to begin or how to prepare recipes, that not only are good for you, but taste good. After all, who wants to eat cardboard? So on a sunny afternoon, Cheapeats ventured to Whole Foods Culinary Center in Bowery for a cooking demonstration.

The Cooking Demo was led by Chef Juan Pablo Chavez – The Wellness Club Chef. What I love about Chef Juan is, he’s the sweetest person you’ll meet and creates recipes that are easy to replicate at home.

First Course – Sweet Potato Stew

This hearty and HEALTHY stew was packed with flavor and a little kick of heat. Onions, Ginger, Garlic. Tomatoes, Garbanzo Beans, Cinnamon and Peppers to name just a few. But the secret ingredient that hit it out of the park was Peanut Butter. Click for Recipe – Sweet Potato Stew

Second Course – Wheatberry Salad

This nutty salad had the right balance of sweet, savory and crunch to make it the perfect Summer Salad. Click for Recipe – Wheat Berry Salad

Dessert – Chocolate Pudding And Lemon Bars Would you ever think that Avocados, Bananas, Dates and Cocoa Powder would make the moist delectable Chocolate Mousse you’ll ever taste? This skeptic tried it and OH SO LIKED IT. Every spoonful was creamy and light, with just the right amount of sweetness. It contained NO ADDED OIL nor REFINED SUGAR, but tasted AMAZING. I tried making it at home and it was full proof. I do suggest tweaking it to your level of sweetness. Click for Recipe – Chocolate Pudding

The last dessert were Lemon Treats. The simple combination of Dates, Walnuts, Sesame Seeds. Lemon Juice & Zest and Unsweetened Coconut, created a sweet and tangy treat that were ADDICTIVE. Click for Recipe – Lemon Bars

These recipes can be made with many things that are sitting in our refrigerator and pantry. They’re SO easy to prepare and are VEGAN, VEGETARIAN, LOW SODIUM AND DIABETIC FRIENDLY.

Do yourself a favor…try making these recipes at home and you will be amazed how your belly and waistline will smile.
