I attended a grand opening party at Carlos ‘n Charlie’s Mexican Grill.
There is something about Carlos ‘n Charlie’s that awakens your spirits and invites you to unwind.
The moment I walked in the door to their dining room, I saw people dancing around the tables while some were singing along with the music. Coco, the bottle juggling bartender, performed while standing on top of the bar’s counter.
This atmosphere would get anyone in the mood to have fun. Carlos ‘n Charlie’s is the type of place where you don’t know what to expect! They are not like the other usual come-in-eat-and-leave restaurants. You can be part of the fun or just watch.
When I walked into the exceptionally large outdoor patio, the tropical view of the pool added so much to the scene. The Create-Your-Own, Walk-Up tableside guacamole stands were convenient allowing every diner to mix and prepare their guacamole exactly the way they wanted.
I was greeted by a server with one of their fruity Margaritas and then the dinner was served. It started with a big bowl of chips along with salsa and guacamole then the server brought a platter filled with BBQ ribs, Carne Asada Quesadilla, BBQ chicken wings and fries. They put the BBQ sauce on thick so you really have plenty of sauce.
I like trying a sampling of several dishes at these openings to see which ones I prefer and that is also a great idea for anyone visiting for the first time.
The menu includes Moo, Splash and Peep- which means meat, fish and chicken entrees. Try the Crunch, Crunch chicken Caesar salad, chicken or Carne Asada Taco salad, or chicken Fajita salad.
Their Mayan Pyramid Nachos is gigantic, a piled-up pyramid of chips, refried beans and melted cheese. Of course they serve tacos, burritos, chimichangas, enchiladas, and other traditional Mexican favorites.
They serve not just regular burgers but 100% Angus beef burgers.
This would be a great place for a party even though there’s always a party at Carlos ‘n Charlie’s.
The first Carlos ‘n Charlie’s Mexican grill was opened in Acapulco, in 1970, and the famous Senor Frog’s in 1994. There are now 11 Carlos ‘n Charlie’s in Mexico. The company came to the United States in 1994 and this one in Las Vegas is their first on the west coast.
