When the gang gets to your house on college bowl game day you will delight them with these top five favorite appetizer and snack recipes. Don’t expect leftovers. Be prepared to whip up some more! The sports fans at your house won’t pick and choose; They will consume all of these treats.
Two and a half pounds ground beef
One cup dried bread crumbs
One quarter (1/4) cup milk
One finely diced onion
One teaspoon salt
One teaspoon pepper
Preparation: Whip the egg and milk with a whisk. Add the ground beef, crumbs, onions and the salt and pepper. Mix it all thoroughly. Sprinkle with Worcestershire sauce for a light coating. Remix. Shape into meatballs the size of walnuts. Cook over medium heat, turning occasionally until well done. Serve with a variety of sauces.
Yield: Enough for ten to twelve guests. This recipe is easy to double.
Fruit: Cantaloupe, strawberries, watermelon, pineapple, muskmelon, grapes
Long wooden skewers
Preparation: Make melon balls and/or cut the fruit into 2″ X 2″ squares. Stick onto the wooden skewers.
Mini Soft Taco Rollups
One package large burrito size flour tortillas
Two pounds “taco meat” mix made or store bought
Fixings: shredded cheese, lettuce, diced tomatoes, onions
Preparation: Cut tortillas into four sections. Create a “make your own appetizer” station. Have frijoles available for any vegetarians.
Two cups cashew nuts
Two cups honey roasted peanuts
One cup pecans
One cup walnuts
Two cups mini-pretzels
Preparation: Mix everything in a large bowl. There is no wimpy cereal in this mix!
Microwave Potato Chips from Food.com
Half dozen fresh, large Idaho potatoes
Seasoning: salt, pepper, onion salt, garlic salt, etc.
Vegetable oil or cooking spray for the cooking dish
Preparation: Scrub the spuds. Slice paper thin (1/16″). Soak the sliced potatoes for ten minutes in cold water. Remove and pat dry. Rub oil or spray the microwave cooking dish. Put the slices in a single layer, sprinkle seasonings as desired. Microwave on high for 5 to 6 minutes. You will have to see what the best length of time is. This recipe takes some time, but boy are these chips good. Six large potatoes will yield about ten servings.
